Roasted Vegetable, Feta and Pesto Oat Made Bake

1 x 250g Pack OAT MADE Savoury Original Oats.
2 Peppers (any colour)
2 Medium Courgettes
1 Punnet of Baby Tomatoes
200g of Feta
Rapeseed Oil
Salt and Pepper
1 tsp Paprika
1 tsp Thyme
4 tsp Red Pesto

Method

Method

  1. Pre-heat the oven to 190ยฐc. Use a 30x20cm dish for this recipe.
  2. Slice and half the peppers, slice the courgettes into about 2cm circles then into halves.
  3. Place the feta in the middle of the dish and add the vegetables and tomatoes around the feta.
  4. Coat the vegetables and feta in oil. Sprinkle the salt, pepper and other spices evenly over the dish.
  5. Place in the oven for 25-30 minutes.
  6. Remove from the oven and mix, the feta will have melted enough to coat the vegetables. Add the pesto and mix well.
  7. Follow the instructions on the OAT MADE pouch to make. Once cooked empty the sachet into the dish and mix well, then serve.
