Oat Made Original Poke Bowl

  • 1 x 250g Oatmade Savoury Original
  • 1/4 Cucumber, thinly sliced
  • 3 tbsp Olive Oil
  • 3-4 tbsp Pickled red cabbage
  • 4 Radishes, thinly sliced
  • 100g Edamame beans
  • 1 Avocado, peeled and stone removed

Dressing

  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tsp rice wine vinegar
  • Juice of 1/2 orange
  • Juice of 1/2 lime

To finish (optional)

  • Mint
  • Coriander
  • Lime, cut into wedges
  • Green Chilli, thinly sliced
  • Sesame seeds

  1. Make the dressing by whisking all ingredients together in a bowl until fully combined.
  2. To build your poke bowls, prepare the oats following then instructions on the packet then divide between 2 serving bowls. Top with cucumber, pickled red cabbage, radish, edamame beans and half an avocado.
  3. Garnish with your choice of mint, coriander, lime, green chilli and sesame seeds.
  4. Drizzle with dressing before serving.

Golden Vegetable Oat Salad with Butternut Squash and Poached Chicken

  • 1 x 250g pack Oatmade Golden Vegetable
  • 1 Small butternut squash, cut into thick slices
  • 2 tbsp Olive oil
  • 1 Chicken breast, about 150g
  • 1 x Small bunch parsley
  • 1 Garlic clove, peeled
  • 1 Small head of radicchio, leaves roughly torn
  • 1 Large handful of rocket
  • Salt and Pepper

  1. Preheat the oven to 200ºC.
  2. Tip the sliced butternut squash into a roasting tin and drizzle over the olive oil. Season well with salt and pepper, toss together then roast for 30-40 minutes or until tender and starting to caramelise.
  3. Meanwhile, poach the chicken. Place the chicken breast into a large saucepan and add the garlic, parsley and a generous pinch of salt then cover with cold water. Bring to the boil then immediately turn the heat down to low and gently simmer for 10 minutes or until the juices run clear from the thickest part of the breast. Remove the chicken from the pan then shred.
  4. Prepare the oats following the directions on the packet then toss together with the roasted squash, radicchio, rocket and shredded chicken.

Oat Made Mexican Style with Vegetable Tacos

  • 2 x 250g Pack Oatmade Mexican Oats
  • 1 Medium Cauliflower, chopped into small florets
  • 3 tbsp Olive Oil
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Cumin
  • 1 tsp Flaked Sea Salt
  • 1/2 tsp Dried Chilli Flake
  • 1 Medium Courgette,julienned
  • 200g Cherry tomatoes, quartered
  • 8 Mini Tortilla Wraps
  • 1 Green chilli, finely sliced, seeds removed if preferred
  • Handful Coriander, leaves only

  1. Preheat the oven to 200ºC
  2. Mix the olive oil together with the paprika, cumin, salt and chilli flakes.
  3. Tip the chopped cauliflower onto a large baking tray then pour over the spiced oil. Toss together to make sure the cauliflower is well coated in oil. Roast for 25-30 minutes, stirring halfway through, or until tender and starting to brown.
  4. Prepare the oats according to the instructions on the packet.
  5. Heat the tortillas in the oven for a few minutes to warm through or char them over the flames of a gas hob.
  6. To serve, divide the oats between the tortillas and top with the roasted cauliflower, courgette, and cherry tomatoes. Garnish with sliced green chilli and coriander.
